Why ‘Cause [aged in gin barrels]  Blend #1 2022         6.8%          $18

Appalachian wild ale fermented on local nectarines and local plums and aged additionally in old tom gin barrels

Last year we presented y’all with a brand new verse and blend of appalachian fruits and we are now beyond excited to re-introduce this newer blend but with the added twist of it being aged in wildly aromatic, botanical forward old tom gin barrels.

Here we have an Appalachian Wild Ale brewed with local barley malt and cereal mashed with local raw wheat. Boiled extensively with burlap-aged hops. Fermented with our mixed house cultures in one of our beautiful STL-made oak tanks. Transferred into oak barrels for months of extended aging. Transferred out of oak onto a massive amount of whole, fresh, local nectarines and plums, both courtesy from the incredible farmers at Barbee Farm of Concord, North Carolina. Fermented and aged on the nectarine/plum combo for 2 months. After conditioning on the fruit, why ‘cause was racked once more into freshly dumped botanically bursting old tom gin barrels. After months of additional aging, this beer was transferred into a bottling tank for packaging. Conditioned naturally inside the bottle and keg.

From the initial blending of fruited barrel stock, we were incredibly smitten with this combination.
Wildly complex and dripping with fresh fruit, this combo interacts flawlessly with the massive botanical profile and oaky/vanilla earthiness of the gin barrels.

ABV: 6.8%
